Although this recipe uses potato chips as a crust for the
cod, it’s really quite light in calories and has enough flavor that you shouldn’t
need to use any kind of dressing or tartar sauce.
Potato Chip Crusted
Cod Recipe
2 6-ounce cod fillets
1 t. prepared remoulade (Cajun seafood) sauce
¼ cup crushed kettle potato chips
Rinse and dry cod fillets. Spray a baking dish with olive
oil cooking spray. Place cod fillets in prepared pan; spread with the
reomoulade sauce and top with crushed potato chips.
Bake at 400 degrees for 10 minutes.
Serves 2 with about 250 calories per piece.
